Fancy Pants started as a simple question: how do you make a $300 bottle of wine?

The answer was straightforward — start with the best fruit you can possibly find, and don’t hold back in the winery.

This wine is built around a tiny parcel of elite McLaren Vale Shiraz, sourced from a block normally destined for top-tier brands. With fruit valued at around $7,000 per tonne — more than three times what we usually pay — the quality of the grapes set the tone for everything that followed. A small portion of outstanding Blewitt Springs Shiraz was blended in to add lift and structure.

The wine spent 18 months maturing in French oak hogsheads, with 60% new oak, carefully monitored and tasted obsessively as the tannins softened and the fruit and oak came into balance. Only around 1,500 bottles were produced.

Bottled under cork and sealed with wax, Fancy Pants is rich, complex and unapologetically luxurious.

Tasting Notes

Dark black fruits, lifted florals and chocolatey French oak, with a plush, powerful palate and remarkable length.

Delicious now with decanting, but will reward patience. Ideally cellar for 5 years and enjoy over the following decade.
