Drumroll... we did it! After bottling the 2023 reds, moving an entire shed, and riding the licence roller coaster, Dave’s Wine Revival is officially open at 447 St Pauls Terrace, Fortitude Valley. Part tasting room, part label-production hub, 100% about the wine. BYO food, bring your mates, and come say hi.
TL;DR (the short pour)
We bottled the remaining 2023 reds (30,000 bottles in a few weeks!), moved out of a giant Virginia shed with… everything (and then some), and found a small but mighty space in Fortitude Valley, survived the licensing wait—and on 4 September (my 48th!) our Wine Merchant Licence landed.
We’re now open Tuesday to Saturday with a flexible tasting room + mini-warehouse setup.
BYO food (uber eats anyone?) or build your own platter from our a selection of meats/cheeses/olives available; the focus is the wine.
Expect the Gerler and Brill wines you know and love, a top notch rotating cast of wines from Queensland producers, indie mates from around Australia and primo drops from further afield. Shop online any time, or better yet—come in and see us at 447 St Pauls Terrace.
The long pour (how it came to be)
What a few months! First, the bottling marathon—week after week, Wade and I (with occasional ring-ins) got the last of the 2023 reds into glass. Then we had less than two weeks to vacate the northside behemoth many of you visited for the Virginia Shed Moving Sale. Picture moving house… but with forklifts, barrels, labellers and years of accumulated gear.
While packing, we hunted for a new home. We knew we didn’t need another cavernous site—just somewhere that could handle the custom label printing gear and double as a tasting room so you can still sit down and sample our epic wines. When the little spot on St Pauls Terrace came up, it felt right: fringe of the Valley entertainment district, easy to find, and cosy enough to focus on people and wine.
The catch? Licensing. You can’t apply without premises secured, and there’s no guarantee you’ll be approved (Queensland licences are tied to premises, not licensees). Enter Russell, licensing consultant extraordinaire. We signed the lease at 447 St Pauls Terrace, lodged the application, and waited... At the eight-week mark, Russell rang: approval was imminent. On 4 September, my birthday, the email hit the inbox. Best present since the 12-wheel truck when I was ten.
Where it sits now (and why you’ll love it)
We hit go on the fit-out. Matt (cheers, Emmo!) dropped in with quick wins for warmth and flow and connected us with a painter. Kris and her style-savvy mate Jo nudged the layout; I built a service counter (I’m a better winemaker than chippy, but it works!). We’ve designed it like a transformer: label production and storage one side, tasting room the other, everything on wheels, forklift-friendly, and the outdoor area is licensed too; perfect for whiling away the afternoon with a refreshing Brill Ramato, mingling with friends over charcuterie and a couple of glasses of red, or decompressing after a big week with any wine you fancy.
It’s early days. We’re working with a branding specialist on the look/feel for Dave’s Wine Revival; signage and logo are coming.
For now, the doors are open Tue–Sat (late Thu–Sat if you’re vibing).
We don’t hold a food licence, so BYO food or get it delivered, or build your own DIY platter lineup from our lineup of meats, cheeses, olives, etc.
On pour: the Gerler and Brill favourites Kris and I have made over the years, plus Queensland wine features, guest drops from indie mates who deserve more shelf space.
If you can’t swing by, shop online anytime and we’ll ship to you.
